South African wine has a history dating back to 1659 with the first bottle being produced in Cape Town by its founder and Gouverneur Jan van Riebeek. Access to international markets led to new investment in the South African wine market. Production is concentrated around Cape Town and almost exclusively located within the Western Cape province, with major vineyard and production centers at Constantia, Paarl, Stellenbosch and Worcester.
There are about 60 appellations within the Wine of Origin (WO) system, which was implemented in 1973 with a hierarchy of designated production regions, districts and wards. WO wines must only contain grapes from the specific area of origin. "Single vineyard" wines must come from a defined area of less than 6 hectares. An "Estate Wine" can come from adjacent farms if they are farmed together and wine is produced on site. A ward is an area with a distinctive soil type or climate and is roughly equivalent to a European appellation.

波爾多產區可以吉倫特河為界，劃分為左岸與右岸兩大區。左岸主要產區包括Médoc及Graves；而右岸較著名產區包括St. Emilion、Pomerol等。兩岸的主要分別在於土壤成分不同，因而更適合特定的葡萄品種。 左岸土釀含有較多碎石，排水力較好，這些條件非常適合種植著名的葡萄品種赤霞珠（Cabernet Sauvignon）。釀酒時，赤霞珠通常會混合梅洛（Merlot）、品麗珠(Cabernet Franc），以及少許的馬碧（Malbec）和小維鐸（Petit Verdot）等。 由於遠離海洋，波爾多右岸土質幼細，土釀成分以黏土（Clay）、石灰岩（Limestone）為主，因而更適合種植圓潤柔順、易入口的梅洛（Merlot）。年輕的右岸酒優美動人，但陳年後也可變得圓潤和層次豐富。 1855年，法國國王拿破侖三世為了向世界推廣波爾多葡萄酒，於是請波爾多葡萄酒商會對波爾多酒莊進行分級。如今，1855波爾多葡萄酒分級制度將61間酒莊接照品質劃分為五個等級。最高級別為一級酒莊，總共只有五間酒莊，分別為， Lafite-Rothschild、Latour、Margaux、Haut-Brion與Mouton Rothschild。
